Easter is falling relatively early this year, so pancake day is already upon us!
Here’s a finance-friendly pancake recipe so you can cook up the classic treat while being gentle on your wallet…
This recipe makes 12 yummy pancakes.
Ingredients and costs
(Approximate costs based on prices at Tesco, correct at time of writing – Feb 2024)
- 100g of flour – 5p
- 2x eggs – 58p
- 300ml milk – 36p
- 2 tablespoons of sunflower oil or vegetable oil – 2.5p
- Your choice of fillings – price varies! Splash out on Nutella and strawberries or banana, or keep it classic with lemon and sugar
Total: £1.01 + toppings
Method
- Pour your 100g of flour into a mixing bowl, making sure to remove any lumps! Gently pressing through the flour with a fork is a great way to remove lumps.
- Add both eggs, 300ml of milk, and 1 tablespoon of your sunflower or vegetable oil to the flour, and then mix or whisk until smooth.
- Add a tablespoon of your chosen oil to your pan and heat gently.
- Pour a thin amount of batter into your pan and cook for a minute or so.
- Now for the fun part…Flip your pancake! Will you risk going for the pan flip, or opt for the safer method of using a spatula?
- Cook the other side of your pancake until golden, then pop it onto a plate.
- Repeat the process until you’ve used up all of your batter – you should be able to make 12 pancakes with this recipe.
- Add your chosen toppings and serve. Yum!
